I absolutely love a simple, healthy recipe and what makes it even better is you only need 1 pot! My kind of recipe.

Easy Mediterranean Lentils

1 cup lentils

4 cups water

1 onion- chopped

1/2- 1 tbsp  cumin

4-5 garlic cloves- chopped

2.5 Lemons- juiced

Sea salt to tast

Instructions:

Wash your lentils well and drain. Place lentils, water, onion, and cumin in a pot. Stir to combine and bring to a boil. Once water boils, lower to a simmer and simmer for 1 hour. About 15 minutes before the hour is up add garlic, lemon juice and salt. Serve in a bowl and top with a swirl of olive oil.

Options: Add carrots, potatoes, spinach or other veggies to make a heartier soup. See our pinterest page for other variations.
