If you missed them at our Anniversary Party, here are the now the infamous Monster Cookies, made by my sister Teresa and mom Liz. Thank you for bringing some awesome goodies for everyone to enjoy! They did substitute the butter with coconut oil so that I could eat them. So these soft, chewy cookies are gluten free, dairy free, and refined sugar free and totally delicious!
5 cups nut flour 1/2 cup melted butter
1 cup raisins 1 cup honey
1 cup walnut pieces 2 eggs, beaten
1 cup flaked unsweetened 1 teaspoon baking soda
coconut 1/8 teaspoon salt
Mix all ingredients.
Drop by large tablespoonfuls onto a greased cookie sheet. Press flat with a buttered fork. If fork is greased, it will not stick. Bake at 325°F until golden brown (15-20 minutes).
